American Wagyu Kobe. Aged and cut by a master butcher. The pioneers of American Wagyu beef, Snake River Farms Wagyu, are coveted by award-winning chefs and served in top-rated restaurants throughout the world. Snake River Farms Wagyu features a buttery texture, complex flavors, subtle sweetness, and a lingering finish.

The Snake River Farms American Wagyu filet mignon has a distinctive buttery aroma and texture. This is the most naturally tender of all steak cuts, with a fine grain that makes it easy to cut with a fork. Sometimes filet mignon is called tenderloin steak because it is cut from the beef tenderloin.

Filet mignon is known for its mild flavor and modest intramuscular fat; however, our American Wagyu filets contain a surprising amount of marbling, which adds greater richness. This steak is delicious, seasoned with just salt and pepper, but is excellent served with classic steak sauces like a tarragon-scented Béarnaise or peppery au poivre.

Aging Beef

All Snake River Farms and Double D Ranch products are aged to maximize the flavor and texture of our beef. They employ two different methods:

Wet-Aging

A technique where subprimal cuts of beef are vacuum-sealed and allowed to rest in refrigeration for a minimum of 21 days. Natural enzymes tenderize the beef and allow deeper flavors to develop. The product is not exposed to the air, so there is no weight loss. Our products are all wet-aged for 21 days or more before they are packaged and shipped.

Dry-Aging

A unique process where beef subprimal is placed in a carefully controlled environment in order to intensify its natural flavor and make it more tender. All products are dry-aged for a minimum of 45 days, the time required to enhance flavor.

How are the animals fed?

Snake River Farms American Wagyu Beef cattle are grass and hay fed on pasture for the first year of their life. They are then fed a sustainable diet of hay, forages, potatoes, vitamins, and minerals. SRF cattle will never receive any growth agents or growth-promoting hormones.

Beef sold in the U.S. is graded by the United States Department of Agriculture (USDA). There are eight total grades and the top grade is USDA Prime.

All Snake River Farms American Wagyu beef grades above Prime. Special breeds of cattle, such as Japanese Wagyu, can produce marbling beyond that of their American counterparts. To grade this high level of marbling, we adopted the Japanese Beef Marbling Score.

Using BMS, beef marbling is measured on a scale from 1 to 12, with a 1 being Select beef and a 12 being the highest level of marbling possible.

My Review of American Kobe Wagyu Filet Mignon 6oz.

The product arrived well-packaged and completely frozen. Not a speck of silver skin or gristle. These are wonderful and will be a welcome meal when my son comes home from college for winter break. They can’t come home for Thanksgiving, so I wanted to be sure there is something extra special for that 4-week break. The meat itself was tender and flavorful. Really nice steaks. Tasty and tender. Some of them are a little odd-shaped, but they cook up great. I pan-fried them in butter to seal them and baked them for 5 minutes at 400 degrees. Perfect Medium rare and tender. Highly recommended. I ordered some ribeyes just based on the taste of the first order. Best steak I've ever had, well worth the price…and I qualify that by saying that the price restricts this to a rare-special-occasion-only purchase. I've paid good money at excellent steakhouses (including wagyu steaks), and this is by far the best. Thanks for a great meal!
